You can have multiple save games, and you can load a previous game if you die.

I'd probably end up saving at a really bad time and have to load up a previous save made literally years ago.

You have lots of save slots, say 1000, so there is no reason not to save all the time (except that it might be hard to find the save you want).

If you slump over unconscious as part of dying (you never revive from it) then that doesn't trigger the "everything dies" consequence.
